All of our lectures draw on our unique knowledge of butchery and local/ sustainable farming to create an event that will inform and entertain groups of any size. Choose one the lectures we have listed or call us and we will be happy to create a custom lecture for you!
Our butcher demos are designed to give you and your audience an up close look at the techniques that are use to break down pork, lamb or beef into the individual cuts you are familiar with. Best of all when the demonstration is over the audience gets to take home some of our famous meat!
This introductory course teaches knife skills, safety techniques, basic anatomy, sausage making, beef and chicken demonstrations and includes hands-on lamb and pig carving workshops. Cooking demos, taste tests and lectures on sustainability and sourcing are incorporated throughout the week to give each student an overview of what being a sustainable butcher means to us and the communities we serve.
You get one-on-one lesson training with Joshua Applestone and then use that knowledge to help cut (working with our other employees) both meat for our wholesale business and retail cuts for our case. This gives you the opportunity to use the knowledge you have earned immediately within a fast-paced, supportive environment.
