Seasonal Sausage 101: Beef

Bring on the bold flavor of beef, and make one of our house seasonal beef sausage recipes! In this class, you'll learn to flavor, mix, stuff and twist your own sausages by hand. We'll also discuss how to use the best of what's on hand, like local vegetables, herbs, fruit, and cheeses in your sausage. The sausage flavor will rotate, but if you're wondering what to expect, some sample recipes of ours include Beef Chimichurri, 50s Cheeseburger, and Texas Red Hots. For these workshops, we will make a rich and hearty sausage suitable for winter cooking.

Whether you're a beginner or seasoned home cook, you'll take your skills to the next level. We'll equip you with recipes, techniques, and ratios you need, and our expert butchers will give you key tips, like how to prevent your casings from exploding before the meat inside is cooked. You'll also get to know our partner farms, and where our pasture-raised beef comes from.

This is a hands-on workshop. You'll have the opportunity to take home fresh sausages for a future meal. Sausages made in this class are beef-based, using pork casings. This class is also suitable for kids ages 10 and up.
