Note: You can skip the poaching step and simply sear/grill your sausages, however this technique will ensure that your sausages are evenly cooked and the casings will not explode. The poaching can also be done ahead of time, if you are cooking for a crowd.
Combine relish ingredients (tomatoes through salt) in a bowl and mix well. Let sit for 20 minutes. Meanwhile, poach the sausages. Put the sausages in a medium pot and cover with water. Over medium heat, bring the water to a simmer and cook until the internal temperature of the sausages reaches 150 F. Remove the sausages from the water and pat dry. Then sear on a grill, until both sides are browned. Top with relish and serve on a bun, with a green salad, or any other way you like!
