- 1 whole (or 2 split) pastured turkey breast, skin on, deboned
- 2 cups prepared stuffing of your choice
- 1 stick unsalted butter, softened
- kosher salt and freshly ground pepper
Preheat oven to 375°. Place your turkey breast skin side down on a sturdy surface covered in plastic wrap. Place a second piece of plastic wrap on top and pound the meat until it’s approximately 1/2″ in thickness. Remove and discard plastic wrap. Season all over with salt and pepper.
Lay breast flat. Using your hands form an elongated mound of stuffing length-wise down the center of the pounded breast. Fold one end of the breast over stuffing and roll it forward, tucking in ends and using the skin to form a uniform cylinder. Now tie the breast with kitchen twine at 1″ intervals to secure. This will ensure it cooks evenly. Rub butter generously all over the tied breast.
Heat 2 tablespoons of butter in an oven safe skillet over medium-high heat. Brown your stuffed turkey breast well on all sides. Transfer the skillet to the oven and continue to cook, basting with butter every 15 minutes or so. Check the temperature early and often in the thickest part of the meat. Once the internal temperature reaches 155°, remove from oven and let it rest on the counter for 15-20 minutes. Remove the twine, slice and serve.
This recipe is perfect for families that love white meat, and need more than what one bird can provide! Feel free to use whatever stuffing you like, adding cheese, dried cranberries, bitter greens or chopped nuts as desired.
