Mom’s Meatloaf

Ingredients

  • 1 1/2 pounds ground beef
  • Salt and pepper
  • 1 teaspoon dried parsley
  • 3/4 - 1 cup Italian bread crumbs (or fresh if desired)
  • 1 heaping tablespoon parmesan cheese
  • 2 eggs
  • 2 slices crumbled cooked bacon
  • 1 can tomato sauce, divided
  • 1/2 onion

Preparation

Heat oven to 375°.

Mix all ingredients (except 1/2 can of tomato sauce and the onion) well and shape into a loaf.

Oil bottom of pan. Add ½ of a sliced onion to pan for flavor.

Bake 1 hr to 1 hr 15 min, until done.

About 35 minutes before it’s done, pour the rest of the tomato sauce and ½ of can of water over the meat.
