- 1 beef heart, fat trimmed and portioned into small pieces
- Juice of 1 lemon
- 1 tablespoon cracked pepper
- 1 tablespoon coarse sea salt
- 2 tablespoons olive oil
Cut the heart in half, then place each half in a bowl or dish for marinating.
Whisk together the lemon juice, pepper, salt, and oil.
Pour the marinade over the heart and marinate at least 4 hours.
Grill, 2- 3 minutes per side for medium- rare.
Remove from the grill and slice to serve.
