Yield: About 20 Meatballs

- 1 pound Fleishers ground turkey
- 1 pastured egg
- 1/2 cup bread crumbs
- 1/4 cup chopped parsley
- 1 clove garlic, finely diced
- 1/4 cup shallot, finely diced
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon red pepper flakes (optional)
Preheat oven to 400° F. Lightly grease a sheet pan with oil or butter.
In a large bowl, mix all the ingredients well with your hands. Form meatballs and place on sheet pan, evenly spaced apart. Bake for approximately 20 minutes, or until meatballs are golden brown. Peak inside the biggest meatball to ensure it’s no longer pink in the middle.
For a weeknight dinner, serve with your favorite sauce, atop whole wheat pasta, with a light dusting of Pecorino Romano. For an appetizer on game day, serve with toothpicks or on endives and cranberry mayo.
