Sausage-Making 101: How the Sausage Gets Made

Ready to see exactly how the sausage is made? Our sausage-making classes are our most popular workshops – and for good reason! We offer numerous types of sausage-making classes using a variety of proteins: pork, beef, lamb, and chicken along with seasonal workshops. 

In each of these classes, you’ll learn to season, mix, stuff, and twist your own sausages by hand. Whether you’re a beginner or seasoned home cook, you’ll take your skills to the next level through the recipes, techniques, and ratios we equip you with. Our expert butchers will also give you key tips and tricks throughout the workshop – like how to make sure the meat properly fills the casing and how to prevent your casings from exploding before the meat inside is cooked. You’ll also get to know our partner farms and how our wonderful pastured animals are raised.

These are hands-on workshops – so prepare to roll up your sleeves! You’ll have the opportunity to taste sausages in class, and you’ll take home fresh sausages for a future meal. These classes are also suitable for kids ages 10 and up. Please choose from the dropdown which class type you would like to attend. Information about each class can be found below.

Sausage Types


In our Pork Sausage class, we will work with traditional recipes such as Sweet Italian or Chorizo sausage. Sausages made in this class are pork-based, using pork casings. 


Want to know how we make our Rockin’ Moroccan or Merguez lamb sausages? Well now is your chance! In our Lamb Sausage workshop, we’ll teach you the skills and recipe to make one of these shop staples. Sausages made in this class are lamb sausages made with lamb casings.


For our Beef Sausage class, the flavor rotates, but if you’re wondering what to expect, some sample recipes include our popular Philly cheesesteak and meatball parm sausage. Sausages made in this class are beef-based, using pork casings.


Some examples of past Chicken Sausage class recipes include buffalo chicken sausage, sweet Italian chicken sausage, and chorizo chicken sausage. Sausages made in this class are chicken-based, using pork casings.
