Holiday Menu

Here are some commonly requested cuts of the season, with a range of options for all size groups and budgets.

BEEF

Standing Rib Roast | Grass-Fed $34.99/lb
Recommended portion is two guests per rib. Upon request we will hinge and tie (separate the meat from the bone and tie it back together for best results in cooking and easy carving).

Tenderloin (Filet Mignon) | $41.99/lb
Recommended portion is 1/2 lb per person. Boneless roast, orders over 3.5 lbs will be two pieces.

Boneless Loin Roast | Grass-Fed $38.99/lb
Recommended portion is 1/2 lb per person. Boneless roast, same cut as New York Strip.

Brisket | $12.99/lb
Recommended portion is 3/4 to 1 lb per person. Choice of first cut, second cut or whole. Usually trimmed to 1/4 inch of fat.

Short Ribs | $12.99/lb
Cut in 2.5″ cubes. There are 3-4 pieces per lb.

Beef for Roasting | $10.99-$19.99/lb
We have a range of cuts that will impress your guests and are perfect for slicing and serving at large parties, without breaking the bank. Check out our options for Top Sirloin, Eye Round, Bottom Round, Top Round, and Chuck Eye Roll.

 

LAMB

Lamb Crown Roast | $34.99/lb
Recommended portion is two to three ribs per person. There are eight ribs per rack, crown roast is 2 rack minimum.

Rack of Lamb | $31.99/lb
Recommended portion is two to three ribs per person. There are eight ribs per rack, sold as whole or half racks.

Leg of Lamb | Bone-In $14.99/lb | Boneless $17.99/lb
We will prepare bone-in or boneless, with or without the shank left on. Recommended portion for bone-in is 3/4 lb per person, for boneless 1/2 lb per person. If selecting bone-in with the shank on, make sure your cooking vessel is large enough.

Boneless Loin Roast | $31.99/lb
Recommended portion is 1/2 lb per person.

 

PORK

Pork Crown Roast | $18.99/lb
1-1.5 lb per rib. Recommended portion is one rib per guest. Crown roast is 12 rib minimum.

Pork Rib Roast | $15.99/lb
1-1.5 lb per rib. Recommended portion is one rib per guest.

Boneless Loin Roast | $18.99/lb
Recommended portion is 1/2 lb per person. Roasts over 5 lbs will be two pieces.

Porchetta | Stuffed $21.99/lb
Stuffed with herbs/garlic, skin on and scored. Minimum 5 lb order.

Smoked Ham | Bone-In $11.99/lb | Boneless $14.99/lb
Recommended portion for boneless is 1/2 lb per person, for bone-in 3/4 lb per person. Choice of whole (11 lbs bone-in, 8 lbs bone-out) or half.

Fresh Ham | Bone-In $9.99/lb | Boneless $12.99/lb
Recommended portion for boneless is 1/2 lb per person, for bone-in 3/4 lb per person.

Pork Shoulder (Boston Butt) | Bone-In $10.99/lb | Boneless $14.99/lb
Recommended portion for boneless is 3/4 lb per person, for bone-in 1 lb per person.

We’re also happy to reserve everything you need for stellar sides, next-day brunch, and midnight snacks. (Trust us, you’re gonna need bacon and charcuterie platters.)

 

The Not-So-Fine Print: Holiday orders must be picked up at a Fleishers butcher shop. We are currently accepting holiday pre-orders for pick-up from Thu 12/20 – Mon 12/24. We are CLOSED 12/25-12/26. On 12/21, we will open for orders from Thu 12/27 – Mon 12/31. We do NOT ship orders or deliver them. Online holiday orders require a $40 non-refundable deposit; the remaining balance will be paid when you pick up.

 

If you have a small order and do not anticipate your order totaling over $40, please call your shop and ask to place a paper form order over the phone.
