Here are some commonly requested cuts of the season, with a range of options for all size groups and budgets.

BEEF

Standing Rib Roast | Dry-Aged $35.99/lb | Pasture-Raised $26.99/lb
Recommended portion is two guests per rib. Upon request we will hinge and tie (separate the meat from the bone and tie it back together for best results in cooking and easy carving).

Tenderloin (Filet Mignon) | $39.99/lb
Recommended portion is 1/2 lb per person. Boneless roast, orders over 3.5 lbs will be two pieces.

Boneless Loin Roast | Dry-Aged $35.99/lb | Grass-Fed $37.99/lb
Recommended portion is 1/2 lb per person. Boneless roast, same cut as New York Strip.

Top Sirloin Roast | $18.99/lb
Recommended portion is 1/2 lb per person. Boneless roast.

Brisket | $11.99/lb
Recommended portion is 3/4 to 1 lb per person. Choice of first cut, second cut or whole. Usually trimmed to 1/4 inch of fat.

Short Ribs | $10.99/lb
Usually cut into 2″ cubes, 3-4 2″ cubes per lb. Can be as large as 2″x2″x10″.

Chuck Eye Roll | $10.99/lb
Pot roast, low and slow. 3/4 to 1 lb per person.

Bottom Round Roast | $9.99/lb
Recommended portion is 1/2 lb per person. Boneless roast.

Eye Round Roast | $10.99/lb
Recommended portion is 1/2 lb per person. Boneless roast.

 

LAMB

Lamb Crown Roast | $32.99/lb
Recommended portion is two to three ribs per person. There are eight ribs per rack, crown roast is 2 rack minimum.

Rack of Lamb | $29.99/lb
Recommended portion is two to three ribs per person. There are eight ribs per rack, sold as whole or half racks.

Leg of Lamb | Bone-In $12.99/lb | Boneless $15.99/lb
We will prepare bone-in or boneless, with or without the shank left on. Recommended portion for bone-in is 3/4 lb per person, for boneless 1/2 lb per person. If selecting bone-in with the shank on, make sure your cooking vessel is large enough.

Boneless Loin Roast | $29.99/lb
Recommended portion is 1/2 lb per person.

Lamb Shoulder Roast | Bone-In $13.99/lb | Boneless $16.99/lb
Recommended portion for bone-in is 1 lb per person, for boneless 3/4 lb per person.

 

PORK

Pork Crown Roast | $18.99/lb
1-1.5 lb per rib. Recommended portion is one rib per guest. Crown roast is 12 rib minimum.

Pork Rib Roast | $14.99/lb
1-1.5 lb per rib. Recommended portion is one rib per guest.

Boneless Loin Roast | $16.99/lb
Recommended portion is 1/2 lb per person. Roasts over 5 lbs will be two pieces.

Pork Tenderloin | $19.99/lb
Sold whole by the piece (3/4-1 lb each).

Porchetta | Stuffed $19.99/lb | Unstuffed $17.99/lb
Can be stuffed (with herbs/garlic) or unstuffed (just the meat: boneless loin with belly), skin on or off, and scored. Minimum 5 lb order.

Pork Belly | $12.99/lb
Whole or sliced. Fresh belly, not smoked or brined.

Smoked Ham | Bone-In $10.99/lb | Boneless $12.99/lb
Recommended portion for boneless is 1/2 lb per person, for bone-in 3/4 lb per person. Choice of whole (11-12 lbs) or half.

Fresh Ham | Bone-In $8.99/lb | Boneless $11.99/lb
Recommended portion for boneless is 1/2 lb per person, for bone-in 3/4 lb per person.

Boston Butt | Bone-In $9.99/lb | Boneless $13.99/lb
Recommended portion for boneless is 3/4 lb per person, for bone-in 1 lb per person.

DON’T FORGET

We’re also happy to reserve everything you need for stellar sides, next-day brunch, and midnight snacks. (Trust us, you’re gonna need bacon and charcuterie platters.)

 

The Not-So-Fine Print: Holiday orders must be picked up at a Fleishers butcher shop between Mon, Dec 18 and Sun, Dec 31. (We are closed on Christmas and 12/26.) We do NOT mail orders or deliver them. Orders for beef rib roasts, beef tenderloin, and whole turkeys require a $60 non-refundable deposit per item; the remaining balance will be paid when you pick up.
